And one of them is definitely Chef Sapna Anand, who never fails to experiment with new flavours and techniques. She’s one celebrity chef who is very down to earth & passionate about cooking – thus leading her to her New Indian Kitchen Cookbook, and now collaborating with Goa by Hubba to churn out beautiful & tasty dishes for patrons.

“What ‘New Indian’ cooking means to me is adapting to your environment and not being afraid to use new ingredients in traditional recipes. For example, I try to add a local twist by incorporating ingredients common to Malaysian cooking so these dishes can be slightly different from if I had prepared them in Bangalore or San Francisco,” says Chef Sapna Anand.

Indian Inspired Cocktails
Although India isn’t considered a mecca of cutting edge and classic cocktails, it is, however, well known for producing some great cocktails sipping poolside and parties utilizing fresh, aromatic, and in some cases, spicy and exotic ingredients – and they have it at Goa by Hubba!
We’ve never tried any Indian inspired cocktails before and these are definitely some palate-opener! And we love them!
We had their Rasam Shooter, Masala Mantra, Rootin Tootin, Blue Basilico, Passion Play, Pandan Pixie & Spiked Mango Lassi. My personal favourite definitely has to be their Blue Basilico & Spiked Mango Lassi!
